One night recently I came home and was reading posts on FB. I came upon a raw peanut butter squares recipe. It sounded so good that I ran over to the nearby Fairway which is open until midnight. I thought, if I make it tonight, I will be eating it by tomorrow which motivated me to get dressed and go out to the store.
Also, I had also been thinking recently of making a raw berry chia seed jam recipe that I had kept seeing posted on FB. It always looked yummy but since I don't eat bread, I didn't know how I would eat it.
The recipe for the raw peanut butter squares didn't actually call for raw peanut butter. It said to use pecans. When I got to the store, I saw Wild Jungle Peanut Butter for sale. This is the only peanut butter I would eat if I were to eat any peanut butter because all other peanut butter including organic peanut butter is infected with alfatoxins which have been known to cause liver cancer.
I had some blueberries and chia seeds at home so a recipe was coming together in my mind. I also had coconut butter, cacao and raw honey. I remembered that I had made some blueberry cacao cups in a muffin pan about a year ago that were awesome. That is when the idea was born. I would make raw peanut butter cups with blueberry chia seed jam on top in a muffin pan. The original blueberry chocolate cup is pictured here.
For the cacao bottom layer I used coconut oil, cacao powder and raw honey. I poured it into the individual cups and placed the pan in the freezer. Then I poured the peanut butter, layer with coconut butter and raw honey on top. The next time I make it I won't use coconut oil in this layer. The recipe that had originally inspired me to make this said to do this but it was too much coconut oil and not necessary. It said to use half peanut butter and half coconut oil. I would just mix it with honey. Almond butter would also be excellent in this recipe. For the jam topping. I had to change a recipe I found and add some water to blend the berries. Just a little. Then add the honey. I used 2 1/2 tablespoons of chia seeds which was more than that recipe called for as well. I allowed the jam to set overnight. Chia seeds swell in water or liquid so that is what makes it like a jam consistency. In the morning I poured the jam on top of the 2 previous layers and ate! Mmm.
I enjoyed them but next time will be even better after a few more tweaks!!!!
